Selected Ingredients

Selecting the very best ingredients is one of the keys to our delicious dishes. We buy all ingredients including seasonings and spices from farmers and producers that we can truly trust.

-No meat, no egg, no dairy products, no fish, no sugar, no MSG

-Japanese traditional grains grown without agricultural chemicals by our Tubutubu growers’ network

-Quinoa from South America

-Seasonal organic vegetables grown in Japan

-Umino Sei is a fine traditional sea salt made in Izu Oshima island which contains more than 60 micro minerals

-Oil produced in a traditional way

We use two kinds of oils: rape seed oil produced in Japan (non-GMO) which is full of essential fatty acids, and extra virgin olive oil made in Italy

-Organic & Bio Wine

Made from 100% organically grown grapes. No antioxidant agent is added, or a minimum amount of antioxidants is used only when bottling. No filtration, no fining. We can feel the brewer's heart by enjoying the wine. Selected carefully to match our dishes.

-Tubutubu Miracle Sweets

Do you sometimes feel a little guilty when you eat sweets? Too much sugar and fat? Don’t worry. You don't have to feel guilty anymore. Tubutubu Miracle Sweets will make you happy, healthy and beautiful. They warm up and cleanse your body. No sugar, no eggs, no dairy products. 100% vegan sweets.

-Organic Pasta

Highest quality pasta made in Italy using organically grown durum wheat semolina and fresh water from a local spring. This pasta is high in nutritional value. We can enjoy the exceptional taste and flavor of the durum wheat.

-Plates and bowls: Special serving dishes glazed by grain ash

All meals are served using original plates and bowls made by the pottery artist Rie Takashima. Her dishes are full of natural energy. She grows traditional grains, makes her own glaze by burning straw and the stalk of grains, and carefully bakes each item in a climbing kiln.

-Space design using lights

The theme of our restaurants is light and twinkling. The base is white which contains all colors, aqua marine blue which is a color of purification, orange which is a color of healing, and green which is a color of creation. Accent colors are gold which symbolize the energies of millets and brown which symbolizes the land.

We are all looking forward to serving you.
